I’ve got a small problem because I can’t remember where I got it from so I can’t credit anyone. Suffice to say OF COURSE it isn’t mine!
Basically you do this:
Chop up your carrots and parsnips and boil them til almost cooked so you can pop them in the oven later with oil and honey to roast.
Take some pork loin, coat in corn flour and fry in batches. Put aside on a plate.
Same frying pan, fry a couple of sliced bramley apples and a sliced yellow onion until they caramelise
Add some water to the pan (I just sloshed some in out of the kettle til the onions and apple were covered)
Add a stock cube and a couple of bayleaves and stir. Let it simmer for a couple of minutes.
Find a deep tray or casserole dish and tip the pork and the apple/onion mix and put it in the oven with the veggies.
Cook some potatoes or brown rice or quinoa or some such to serve with it
